Food of the Central African Republic

culinary traditions of the Central African Republic

The food of the Central African Republic includes both native farming foods and foods introduced from the new world.[1] Plantains and cassava are the main sources of carbohydrates.[1] Fufu made from cassava is an important part of the diet.[1] Bushmeat and river fish are often eaten with tomato or peanut sauces, flavoured with chillies and vegetables.[1]
